&lt;strong&gt;Pork Tenderloin&lt;/strong&gt; - Wood fire grilled, served medium, over a fresh spring caponata (salsa, with eggplant red &amp;amp; yellow bell peppers, red onions, and dried bing cherries,) topped with a salad of young arugula and cinnamon balsamic vinaigrette.&lt;br /&gt;&#13;
