The characteristics are a round non-uniform shaped loaf cooked directly on the floor of an oven, no tins or molds; traditionally no salt is used in the bread as bread in Italy is served with salami and other charcuterie items that are typically heavier seasoned. As far as serving our Tuscan peasant bread in a bag, it keeps the bread warm while allowing steam to escape which would create a &quot;soggy&quot; crust which would be very un-Italian!
